Chemical Structure of Angiotensin converting Enzyme Inhibitor Isolated from Onion Flesh

Abstract
From the methanol extract of onion flesh, four major flavonols (F©û, F©ü, F©ýand F©þ) were separated by Sephadex LH20 column chromatography. F©ý fraction was found to have a high inhibitory effect on ACE activity. Based on the ultraviolet-visible absorption spectroscopy, F©ý fraction was conjectured to be a flavonol with 3,5,7,3¢¥-tetrahydroxy group. After acid hydrolysis of the fraction, F3 was found to consist of quercetin and glucose. Through FAB-MS analysis, F©ýwas finally confirmed as quercetin 4¢¥-glucoside.
